The Lannister's true fortune is in their lands, in the tributes from their vassals, in the trade from Lannisport, and in their gold and silver mines. So, I was reading a fic, like, a month ago, and there was this plot point in which Casterly Rock falls and is occupied for a while. So, I know that in the show the gold mines have run dry, but I don't recall something like that being ever mentioned i the books. For all we know, there is still a thousand yearsworth of gold in Casterly Rock.

Start by taking Lannisport and cutting off all supplies to Casterly Rock by having your fleet besiege it by sea, this way will take time, but in time it would be forced to surrender.

Casterly Rock has been occupied long enough that it's no longer viable as a mine. Frankly Casterly Rock's mines probably went dry long before even Aegon's Conquest. I have a personal theory that there is a store of gold the Lannisters keep locked as a wellspring of money they occasionally tap.
It was said that Casterly Rock overlooks Lannisport, so it must be up high. The castle was also described as having a gold mine underneath it. So I imagine it being a huge mountainous goldmine next to Lannisport with a large castle on top.

There is no longer any mining done in Casterly rock. The remaining gold veins are kept as decoration/bragging. The Lannisters still have active mines, it's mentioned there is mines around the Golden Tooth etc. Even if the gold had run out, they still are a major house with vast lands who pay taxes to them.

Probably not a terrible change to make, and a nice metaphor for the eventual disintegration of Lannister power, but a radical change none the less.
